Apple Balsamic Scallops

  • 10 large sea scallops
  • 3 slices of bacon, sliced
  • 300g baby spinach
  • 100g mushrooms, sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons apple balsamic vinegar
  • 1 tablespoon honey
  • salt and pepper to taste


  1. Dry scallops and season with salt and pepper. Whisk together the apple balsamic and honey with 1 tablespoon water and set aside. In a large sauté pan, cook bacon and mushrooms over high heat until bacon is crisp and mushrooms are golden. Set aside. 
  2. Add butter and olive oil to the same pan then add scallops and cook without disturbing for 2-3 minutes over high heat until deep golden. Turn over and cook second side. Pour over the balsamic mixture, shaking the pan to deglaze the scallops.
  3. Return mushrooms and bacon to the pan, add spinach and wilt briefly then serve.
